Can you believe it’s already back-to-school season? 🎒
The lazy days of summer are officially over, and the hustle is real!
Between school drop-offs, homework, and after-school activities, it’s easy to feel like you’re running on empty.
Plus, the weather is still pretty toasty, so the last thing anyone wants to do is stand over a hot stove to make dinner. 🥵
That’s why I wanted to share one of my favorite recipes for this time of year:
Southwest Black Bean and Quinoa Salad.
It’s the perfect solution for those busy weeknights when you’re tempted to just order takeout.
This salad is so simple to throw together, uses ingredients you probably already have in your pantry, and is packed with flavor.
The best part? You can make a big batch at the beginning of the week and have easy, delicious lunches or as a dinner side for a couple of days.
It’s a true “cook once, eat twice” hero.
You’ll thank yourself on Wednesday night when you get home late and there’s a ready-made healthy meal waiting for you in the fridge. No cooking, no mess, just pure convenience and deliciousness.
Back-to-school doesn’t have to mean takeout every night. I’m here to help you nourish yourself well this season. 😎
